Wifey’s Lemony Zoodles Recipe

1. 2 zucchini
2. cooking spray
3. 1 sliced onion 
4. 1/2 bunch trimmed and quartered radishes
5. 2 tablespoons olive oil
6. 1 teaspoon kosher salt
7. 1 teaspoon lemon zest
8. 3 cloves chopped garlic
9. 1/4 teaspoon dill weed
10. 1 pinch salt and ground black pepper
11. 1/2 lemon juice
Prep:20 Minutes, Cook:34 Minutes, Ready In:1 Hours 14 Minutes
Directions :
1.covert zucchini into noodles.boil noodles for 30 minutes.
2.heat oven to 190 degree. grease a baking sheet with cooking spray.
3.place onion slices on one facet of the baking sheet.place radishes on the other facet of the baking sheet. spread 1 tablespoon olive oil on top.
4.mix well kosher salt and lemon zest in a bowl. sprinkle over onion and radishes.
5. bake inside the heated oven until onion and radishes are tender and barely browned for 25 minutes.
6.heat a pan over medium heat; grease with cooking spray. cook and stir garlic until aromatic, three to five minutes.spread 1 tablespoon olive oil. add onion and radishes; cook and stir till browned for 3 mins. stir in dill weed.
7. mix zucchini noodles into the pan; cook until heated thru for 3 mins. season with salt and pepper. eliminate from heat; pour lemon juice on top.
