Sweet Potato Chickpea Chili Recipe

1. 1 tablespoon olive oil
2. 1/2 large onion, diced
3. 1 (28 ounce) can diced tomatoes
4. 2 cups vegetable stock
5. 2 cups sweet corn
6. 2 cups canned chickpeas
7. 1 cup tomato paste
8. 1 large sweet potato, peeled and cubed
9. 2 tablespoons sriracha sauce
10. 1 tablespoon chili powder
11. 1 teaspoon ground cinnamon
12. 1 teaspoon ground nutmeg
13. 1 teaspoon ground cumin
Prep:15 Minutes, Cook:8 Hours 5 Minutes, Ready In:8 Hours 20 Minutes
Directions :
1. warmth olive oil in a skillet over medium-high heat; cook dinner onion till smooth and translucent, approximately 5 minutes.
2. integrate cooked onion, diced tomatoes, vegetable stock, corn, chickpeas, tomato paste, and sweet potato in a gradual cooker; season with sriracha sauce, chili powder, cinnamon, nutmeg, and cumin.
