Spicy Sweet Corn Succotash with Smoked Sausage Recipe

1. 8 ounces Farmland® Smoked Sausage, diced
2. 2 tablespoons vegetable oil
3. 1/2 cup pearl onions, quartered
4. 2 garlic cloves, sliced
5. 1 teaspoon jalapeno chile, diced
6. 1 cup sweet corn
7. 1/2 cup edamame, cooked and shelled
8. 1 red bell pepper, roasted, diced
9. 1 cup cherry tomatoes, halved
10. Salt and pepper to taste
11. 2 tablespoons red wine vinegar
12. 1 tablespoon chopped fresh parsley
13. 1 tablespoon chopped fresh chives
14. 1 cup okra, halved, charred on grill
15. Lemon zest, for garnish
Prep:15 Minutes, Cook:20 Minutes, Ready In:35 Minutes
Directions :
1. in massive saute pan, warmness vegetable oil over medium-excessive warmth. upload sausage and sear till browned. cast off and reserve. (as a substitute, grill sausage for unique flavor profile.)
2. upload pearl onions and cook dinner until gently caramelized. add garlic and jalapeno, cooking for 1 minute extra.
3. add candy corn, edamame, roasted crimson peppers and cherry tomatoes. season with salt and pepper. saute briefly to warm thru.
4. upload pink wine vinegar along with sparkling herbs. modify seasoning if necessary.
5. upload grilled okra and reserved sausage. garnish with sparkling lemon zest.
