Spicy Sweet Corn Succotash with Smoked Sausage Recipe

1. 8 ounces/227 gm Smoked Sausage,crushed
2. 2 tablespoons vegetable oil
3. 1/2 cup pearl onions, sliced
4. 2 grated garlic cloves
5. 1 teaspoon chopped jalapeno Chile
6. 1 cup sweet corn
7. 1/2 cup edamame, cooked and shelled
8. 1 red bell pepper, roasted, diced
9. 1 cup cherry tomatoes, halved
10. Salt and pepper to taste
11. 2 tablespoons red wine vinegar
12. 1 tablespoon chopped fresh parsley
13. 1 tablespoon chopped fresh chives
14. 1 cup okra, halved, charred on grill
15. Lemon zest, for garnish
Prep:15 Minutes, Cook:20 Minutes, Ready In:35 Minutes
Directions :
1. in a saute pan, heat vegetable oil over medium-excessive heat. add sausage and stir till browned. 
2. add pearl onions and cook until gently caramelized. add garlic and jalapeno, cooking for 1 minute extra.
3. add candy corn, edamame, roasted crimson peppers and cherry tomatoes. season with salt and pepper. saute briefly to warm thru.
4. add pink wine vinegar along with sparkling herbs. modify seasoning if necessary.
5. add grilled okra and reserved sausage. garnish with sparkling lemon zest.
