Pique (Puerto Rican Hot Sauce) Recipe

mixture the flavors of aji dulce, culantro, habaneros, pineapple, and tequila into home made pique, a thick and tangy puerto rican warm sauce.

1. 2 tablespoons olive oil
2. 1 onion, roughly chopped, divided
3. 20 habanero peppers, halved
4. 5 aji dulce peppers, halved
5. 8 cloves garlic, chopped
6. 1 cup pineapple juice
7. 6 tablespoons lime juice
8. 1/4 cup tequila
9. 1/4 cup white vinegar
10. 8 sprigs cilantro, chopped
11. 2 sprigs culantro
12. 1 teaspoon white sugar
13. 1 teaspoon dried oregano
14. 1/2 teaspoon salt
15. 1/2 teaspoon ground black pepper
16. 1/2 teaspoon cacao powder
17. 1/2 teaspoon ground cumin

Directions :
1. heat oil in a saucepan over medium warmth. add 1/4 of the onion, habanero peppers, aji dulce, and garlic. cook dinner and stir till smooth, approximately 3 minutes. permit cool at the least five mins.
2. transfer pepper mixture to a blender. upload pineapple juice, lime juice, tequila, vinegar, cilantro, culantro, sugar, oregano, salt, black pepper, cacao powder, and cumin. blend until clean. pour sauce into a tumbler bottle with a lid; allow stand for a least 1 week for flavors to mixture.
