Peperonata Recipe

Ingredients:
1. 3 tablespoons olive oil
2. 2 onions, chopped
3. 3 cloves garlic, minced
4. 4 potatoes, chopped
5. 5 tomatoes, chopped
6. 3 red bell peppers, cored and sliced
7. 3 yellow bell peppers, cored and sliced
8. 1 cup water, or more as needed
9. 1/2 cup tomato paste (optional)
10. 1/3 cup capers
11. 1/4 cup chopped fresh basil
12. freshly ground black pepper
Preparation:
Prep:30 Minutes, Cook:50 Minutes, Ready In:1 Hours 20 Minutes
Directions :
1. heat olive oil in a massive pot. add onions and garlic; prepare dinner and stir till soft and lightly browned, about five mins.
2. stir potatoes, tomatoes, red bell peppers, yellow bell peppers, water, tomato paste, capers, and basil into the pot. cook dinner till potatoes and peppers are smooth, adding extra water if wished, approximately 45 minutes. season with pepper.
