1. 3 cups water
2. 1 cup white sugar
3. 1 cup fresh lemon juice
4. 1 tablespoon lemon zest
5. 20 leaves fresh crushed mint,
6. 1/2 teaspoon salt
7. 1 1/2 tablespoons gelatin powder

1. make a mild syrup in a pan with water and sugar.add in lemon juice, lemon zest, mint leaves, and salt. remove from heat; stir in gelatin powder.let it cool for 20 minutes.
2. freeze syrup within the ice cream maker in line with producer’s instructions for 20 minutes. keep in tall glasses.
