Mini Gluten-Free Banana Coffee Cakes Recipe

Ingredients:
1. Wet Ingredients:
2. 2 ripe bananas, mashed
3. 3/4 cup packed dark brown sugar
4. 1/2 cup milk
5. 1/2 cup butter, softened
6. 1 egg, beaten
7. 1 teaspoon vanilla extract
8. Dry Ingredients:
9. 1 1/2 cups gluten-free baking mix
10. 1/2 cup chopped pecans 
11. 1 teaspoon xanthan gum
12. 1 teaspoon ground cinnamon
13. 1 teaspoon ground nutmeg
14. 1/2 teaspoon salt
15. 1/4 cup dark brown sugar
Preparation:
Prep:10 Minutes, Cook:20 Minutes, Ready In:40 Minutes
Directions :
1.heat oven to 175 degree c. grease 12 muffin cups.
2.mix bananas, 3/four cup brown sugar, milk, butter, egg, and vanilla extract together with a stand mixer; add baking blend, pecans, xanthan gum, cinnamon, nutmeg, and salt and mix on low till just blended right into a batter. pour batter into prepared muffin cups. sprinkle extra brown sugar over the batter.
3.bake within the heated oven until a knife inserted into the middle comes out smooth, about 20 minutes. cool in the pans for 10 minutes before serving.
