1. 3 lemons
2. 1/3 pound butter
3. 1 3/4 cups white sugar
4. 5 eggs, beaten

1. crush the zest of two lemons; squeeze juice from three lemons.
2. soften butter with sugar over very low heat in a double boiler; slowly pour in overwhelmed eggs and lemon juice. stir lemon zest into butter combination; retain to stir constantly till combination is thickened. put off from heat to cool completely.
