Cracked Wheat and Mint Salad Recipe

1. 2 cups boiling water
2. 2 cups cracked wheat
3. 1 (15 ounce) can chickpeas, drained
4. 2/3 cup olive oil
5. 1 red bell pepper, finely chopped
6. 1 (4 ounce) package feta cheese
7. 3 tablespoons red wine vinegar
8. 1/4 cup olives
9. 1 carrot, finely chopped
10. 3/4 cup fresh mint
11. 1 tablespoon white vinegar
12. 1 clove garlic, crushed
Prep:20 Minutes, Cook:5 Minutes, Ready In:1 Hours 40 Minutes
Directions :
1. integrate boiling water and cracked wheat in a bowl; cowl with plastic wrap. let cool slightly, about 15 minutes. refrigerate until equipped to apply.
2. stir chickpeas, olive oil, purple bell pepper, feta cheese, purple wine vinegar, olives, carrot, mint, white vinegar, and garlic into the soaked cracked wheat. chill absolutely before serving, approximately 1 hour.
