Consolidate sugar, mint leaves and water in a small saucepan. Blend over low warmth until the sugar has broken down and simmer for 5 mins.
Fill in a little container and place in the refrigerator until chilled.
- Strain through a sifter or sieve into a big serving container. Include soda water, ice cubes and mint leaves and mix before serving.
