- Put the mango pieces, on a baking tray in a single layer. Put in the refrigerator for 4 hours or until chilled.
- Then, put the sugar in a heatproof bowl or container. Pour boiling water and blend until sugar breaks down. Include the lemon squeeze and mix till they combine properly. Cover with plastic wrap and place in refrigerator to chill.
- Put the mango and syrup in a food processor and blend until smooth.
- Pour 1 tablespoon of the mango blend into each serving glass. Top with sparkling wine and serve.
